Limoncello and Prosecco – what’s not to like?! This cocktail is my welcome drink for the Sicilian Night Supper Club on 7th March 2015. Limoncello is originally a Sicilian drink essentially made from Sorrento lemons, sugar syrup and Grappa (95% proof). It is the second most popular liqueur in Italy and has recently become popular in other parts of the world too.
6 tablespoons of limoncello
1 Bottle of chilled Prosecco
Take 6 champagne flutes and run the cut side of the lemon around the rim of each glass just to wet it a little.
Put the sugar on a plate and dip the rim of each glass in it to frost the edge.
Pour a tablespoon of limoncello into each glass and top up with Prosecco. Garnish with mint and a slice of lemon.
Serve straight away.
