Gin & Rosemary Fizz (Makes 4 – 6)

4 Rosemary Sprigs

20g Caster Sugar

80 ml Water

Juice of a lemon

150ml Gin

1L Soda Water

First, maGin & rosemary Fizzke a rosemary syrup.  Place the rosemary sprigs in a small pan with the caster sugar and water.  Bring to the boil over a medium heat and then reduce the heat and simmer for 5 minutes.  Remove from the heat and allow to cool completely, then strain.

To make the cocktail, half fill a cocktail shaker with ice.  Add the gin, lemon juice and 3 tablespoons of the rosemary syrup and shake well.  Strain into glasses half filled with ice and top up with soda.  Garnish with rosemary sprigs and serve.
